Mark's Chocolate Pie

Ingredients

1 1/4 cup	-	Sugar
1/2 cup	-	All-Purpose Flour
1/4 tsp.	-	Salt
3 cups	-	Milk
4	-	Egg Yolks
3 squares (3 oz.)	-	Semi-sweet Chocolate, chopped

----- Meringue Ingredients -----
4	-	Egg Whites
1 tsp.	-	Vanilla
1/2 tsp.	-	Cream of Tarter
1/2 cup	-	Sugar

Directions

In medium sauce pan combine sugar, flour and salt; gradually stir in milk, add chocolate. Cook and stir over medium heat until thickened and bubbly.
Reduce heat; cook and stir 2 minutes more. Remove from heat.
Separate egg yolks from whites; set aside for meringue. Beat egg yolks slightly. Gradually stir in 1 cup of hot mixture into yolks. Return egg mixture to saucepan; bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat.
Pour hot filling into baked pastry shell. Immediately make meringue below, then continue with steps.
Bake at 350 degrees for 12 - 15 minutes or until meringue is browning on tips.
Cool
Cover; chill to store. Makes 1 pie

... MERINGUE ...
In a medium bowl beat the egg whites, vanilla, and cream of tarter at medium speed of an electric mixer about 2 minutes or until soft peaks form. Gradually add the sugar, about 1 tbsp at a time, beating at high speed of electric mixer about 5 minutes more or until mixture forms stiff, glossy peaks and sugar is dissolved. Immediately spread merignue over pie, carefully sealing edge to pastry to prevent shrinkage.
